Rainbow unicorn cookies and cake pops

I love rainbows, they are so unique and speak of the promise of brighter things around the corner.  The challenging thing about the rainbow theme to produce, is the number of colours involved. Whipping up 6-7 colours of anything (in 6-7 bags, bowls, piping tips)  is rather time-consuming. But as an added bonus, colours make your feel happy, they really do! When I make a rainbow theme, I’m smiling from end to end when the whole set is done because the colours just brighten up my day!

These were made for the beautiful Nicole O’Neil, of the Real Housewives of Sydney, for her daughter Neve’s birthday party.
